Many people in our hectic world seek the nutritional reassurance of eating in the manner of our ancestors. This means respecting the food we eat and the animals who provide it for us.
We source our Irish meat from a local organic farm where the cattle are grass-fed all year round and the animals are born and are organically reared without the use of pesticides, hormones or unnecessary antibiotics. The farmer we work with uses seaweed in the nourishment of his cattle. This adds to the quality of the meat. The animals are carefully and humanely farmed in a organic environment. We use an organic butcher to traditionally dry the liver which can then be made into powdered capsules.
